Salad-style fried tomato noodle flavored with Japanese stock

Teppan Mitsuki is located down an alley in the refined Pontocho area. Because of its location in the geisha quarter, the owner conceived of a new menu preferred by maiko (apprentice of geiko) and ladies. “Fried noodle with tomato and mizuna leaf (950 yen)” is a popular menu item.  The noodles fried with olive oil and simmered in Japanese stock and salt match perfectly with beer. Another popular menu item, okonomi-yaki, was thought up under the concept of “goes well with alcohol.” The dough uses no water but a good deal of sticky mountain potato.  Out side is crispy and soft inside – this is totally new style of okonomi-yaki.
