Best known as Kyoto’s cool summer sweet

Amongst all of other popular items offered by Kamehironaga, definitely the most popular and famous is their “Shitatari,” which means “dew” in Japanese.  It has a strong connection with one of Kyoto’s purest sources of water from the Kikusui Well (the Chrysanthemum Flower Well).  The region where the well is located is the home to Kikusui-hoko, one of the sacred floats that joins in the Gion Matsuri Festival’s grand parade in July.  It is said that Shitatari originated to be dedicated to the float based on an ancient Chinese story in which a child named Kikujido lived to the incredible age of 700 years old from drinking the magical dew of the chrysanthemum (kiku) flower. Using only Japanese ingredients such as brown sugar, starch syrup, fine Japanese sugar and agar, this jelly-like sweet has a beautiful transparent amber color and is incredibly delicate.  As soon as it is brought to the mouth, the gentle sweetness of brown sugar indulges your palate like soft sweet dew as the name describes.
