Honke Jubei has been considered one of the best Kyoto-style sushi restaurants located in Gion since its opening in 1936. The restaurant was moved to its present location, Karasuma Nishikikoji, in 2011, but their taste has never changed. Every morning, the chef goes to the central wholesale market to look for fresh mackerel for their sushi. Contrary to hand-formed Tokyo-style sushi, Kyoto-style sushi is in a bar shape, from being rolled or placed in a box. They use Kyoto rice and cook it in sea kelp so that the more you chew, the more taste spreads in your month. One of the most popular items is the Isomaki. A vinegary, salted piece of mackerel is sandwiched by rice and wrapped in seaweed. The strong vinegar flavor will stimulate your appetite and you won’t be able to yourself from taking the next piece.
