Revived Kyotoite’s favorite egg sandwich
La Madrague’s famous and most popular “egg sandwich” is actually adopted from the popular western style restaurant Corona in the Kiyamachi area, which closed in February 2012. The owner Shoji Hara who was also a famous figure in the area started Corona in 1945. He was 96 years old when he finally decided to close and was always in the kitchen from the first to the last day of his restaurant. Hara’s most loved dish was the egg sandwich as well as other popular dishes such as rice omelet and pork cutlet, for which customers used to line up. A few months after Hara closed his restaurant, the news went throughout Kyoto that the famous Hara’s egg sandwich had come back to life. The owner of La Madrague, Sanshiro Yama, had been a big fan of Corona’s egg sandwich and by chance had the opportunity to learn how to make it from Corona’s owner who allowed him to name his sandwich “Corona’s Egg Sandwich”. Thick omelet, thickly cut breads, sweet and rich demi glace and mayonnaise sauces with the hotness of mustard and sourness of vinegar were thought to have perfectly brought the egg sandwich back to life. However, when former customers of Corona came, they made comment such as “Corona’s was softer’, ‘Corona’s was thicker’ and ‘It is different from Corona’s…”. This made Yama realize that he could not completely revive the “Corona’s Egg Sandwich”. Thus, instead of following the original recipe, he decided to make some subtle changes, listening to his customer’s opinions and keeping Corona’s atmosphere and taste in mind. Adding some milk and less egg, and steaming the omelet while frying made it possible to create the lightness of the original. Finally, “Corona’s Egg Sandwich” was reborn. Evolved from “Corona’s Egg Sandwich”, La Madrague’s Egg Sandwich is nostalgic and unforgettable.
